mmm...mmm....good

Ever have one of those days where the weather is yucky, you just can't seem to get anything done and you don't even want to THINK about making dinner?

Enter simple (yet delicious) chicken noodle soup recipe to the rescue! You can even make it while your oldest tests your IQ with rapid-fire "why?" questions and your littlest has a death grip on your pant leg. What's better than that? (Besides take out!)

Chicken Noodle Soup
1 Rotisserie chicken pre-cooked from grocery store (or you can make your own - over achiever)
2 qts chicken broth
1 qt water
2 Tbls oil
1 onion (coarsely chopped)
4+ carrots (coarsely chopped)
1 tsp thyme
1 package Reames noodles* (see below)




In a large stock pot bring to a boil the chicken broth and water. I use chicken bullion cubes to make the broth. Meanwhile debone your chicken and place all of the bones and skin into your stock pot. Set meat aside for later. 


Cover and simmer for 20-30 minutes.

Add your oil, carrots, and onions to a large skillet and saute over medium-high until onions are slightly transparent and carrots are crisp-tender (more crisp than tender, they'll cook some more in the soup).


Strain your broth to remove all the bones and skin. Add carrots, onions, chicken meat, and thyme to broth. Bring to a boil and add noodles. Gently boil uncovered for 20-30 minutes.

Serve and enjoy!

I love to make it when I have guests over for dinner. It's just so simple and tastes like you worked so hard. It tastes great as leftovers too.

*Reames noodles: you can find them in the frozen foods section of your grocery store. They usually aren't with the other frozen pasta, where you would expect them to be. They are in a little bag and kind of hard to find, but they are so worth a little extra time at the grocery looking for them. Also the noodles look kind of small, but resist putting in another bag, they will get bigger and it will be plenty of noodles for all of your soup - I promise!
